It’s a lot more beginner friendly than it was back in the day so it might be easier for you to jump in. Final Fantasy VII Remake Intergrade is an excellent reimagining of the iconic, JRPG classic.
Best Graphics and Animation: Ni no Kuni: The Wrath of the White Witch. That's probably not the best one to start on, but Fire Emblem Three Houses is a good start, or Dragon Quest 11 S in September. The game is huge, full of vibrant people and places. The first one is more Old-School: Sprites. For a great JRPG that really sticks to the classic roots of the genre (but in all the best ways), you could go with Dragon Quest XI. It is an open-ended farming simulator RPG that took inspiration from the Harvest Moon series. There's no JRPG series better to start with than Dragon Quest, and Dragon Quest XI is the best way to get involved in the franchise. I really really hope Persona 5 Royal is announced for the Switch later this month. This game is simple enough to be someone’s first RPG, but has enough depth and side content to challenge genre veterans.
The Nintendo Switch version is also the definitive release of DQ XI - the entire game can be played with a 16-bit SNES-like graphical style if so chosen, and includes a fully-orchestrated new score. Persona 4 is a turn-based JRPG with tons of Japanese mythology and history crammed into its story and characters. The JRPG is a time-tested genre that spans back to the early days of gaming consoles.
